When I was trying to decide what to make for this week’s post, I wanted to do something simple, yet delicious with the ingredients I have in the fridge. I love to use the same ingredients in multiple dishes mainly for convenience and cost purposes. Since I had some green cabbage leftover from a week ago, I’m going to use it to make an egg & cabbage stir fry, which is one of my favorite dishes growing up in Vietnam.
More about cabbages
Cabbage is a part of the cruciferous family. They are low in calories and are packed with nutrients. There are many different types of cabbages. Green cabbage, red or purple cabbage, Napa cabbage, and savoy cabbage.
Green cabbage reminds me of iceberg lettuce. Out of the four varieties of cabbages, I often use green cabbage to make different Vietnamese dishes: Boiled cabbage, stir fry cabbage and Vietnamese chicken salad (gỏi gà).
When picking out cabbages at the grocery store:
- Pick ones where the leaves are tightly packed
- Choose a cabbage that feels firm and heavy
What is egg & cabbage stir fry?
Egg & cabbage stir fry is a simple yet delicious dish. Did I also mention it is inexpensive? It contains scrambled eggs mixed in with stir fried cabbage that has been seasoned with garlic powder, fish sauce (I like to use the Red Boat brand), green onion, salt and pepper. It’s a perfect dish for those busy weeknights.
When & what to serve with egg & cabbage stir fry?
In Vietnam, there are many “all day” dishes. We don’t have dishes designated for just breakfast or just lunch or just dinner. For example, the well known and loved phở. You’d think that it is a lunch and dinner dish only, but it is not. It’s a popular breakfast dish as well. This is why I love cooking Vietnamese food.
Egg & cabbage stir fry is one of those all day dishes. I love to serve it at breakfast with a side of homemade toasted bread with butter. Or for lunch/dinner with a side of plain Jasmine rice and a generous drizzle of Sriracha for heat. Easy and simple.

Egg & Cabbage Stir Fry (Bắp Cải Xào Trứng)
Ingredients
- 2 eggs
- 1 stalk chopped green onion
- 1 tsp garlic powder or fresh chopped garlic
- 1 tbsp vegetable oil
- ½ tsp fish sauce
- 1 tsp pepper
- 1 tsp salt
- ¼ shredded green cabbage
- Sriracha sauce (optional)
Instructions
- Thinly slice the green cabbage.
- Add vegetable oil to a pan and let the oil heat up.
- Add the green cabbage, salt and pepper and toss to combine. Let the cabbage cook for about 5 minutes.
- While the cabbage is cooking, crack two eggs in a bowl. Add to the eggs, chopped green onion, garlic powder, fish sauce and pepper. Beat the eggs to combine all the ingredients in the bowl.
- Add the beaten eggs into the pan with the cabbage and cook until the eggs are done.
- Serve with a drizzle of Sriracha sauce either alone or with Jasmine rice.
The next time you forget to defrost meat and don’t know what to make for dinner. Grab some green cabbage and eggs and give this dish a try.
